Altmann
Amsteldijk 25 (662 77 77). map
Up market spacious restaurant on the border of Amstel river, a bit out of city center. Elegant styling with dark brown sofas, light walls and lots of candles. The cooking by a former chef of the Dylan is definitely worth a visit. See and be seen is the motto here; make reservations for the VIP-deck (4 tables on a raised platform) if you're in the mood.

Open 6pm-11pm. Bar open until 1am (3am weekends). Closed Sun.

De Belhamel
Brouwersgracht 60 (622 10 95). map
Elegant restaurant with a beautiful Art Nouveau interior. Most tables have a good view of the junction of the Herengracht and Brouwersgracht canals, one of the main attractions of this eatery.

Café George
Leidsegracht 84 (626 08 02). map
See-and-be-seen in this hip city centre brasserie, where you can hobnob with the local celebs. George is long and narrow, with small tables packed closely and lots of mirrors, so you can get a good view of the neighbors. Typical brasserie-style menu, with Entrecote Béarnaise, Tarte Tatin and Crème Brûlée for example, and a good selection of wines. Staff can be a bit inattentive.
Open daily 11am-midnight.

Envy
Prinsengracht 381 (344 64 07). map
Another hot & hip dining concept from the Supperclub crew. Envy has a minimalist black interior with a long kitchen and bar in the front, lined on one side with fridges showcasing wines, sausages and cheese. If you want more comfy seating opt for a table in the dining area at the back. Envy offers a varied menu of excellent but somewhat pricey tasters. A word of warning: the staff here can have a bit of an attitude.
Open lunch Fri-Sun noon-3pm, dinner daily 6pm-11pm.

A la Ferme
Govert Flinckstraat 251 (679 82 40). map
Small and intimate restaurant in Pijp neighborhood, Amsterdam's Quartier Latin. No frills interior with the possibility to dine outside in the cozy garden on a nice summer's day. Refreshing take on traditional French cuisine leads to exquisite cooking, and with that a la Ferme offers a nice selection of wines. Excellent value for money!

Fifteen
Jollemanhof 9 (0900 343 83 36).
map
Modeled after its London counterpart, where famed TV-cook Jamie Oliver took in 15 deprived youths to train as cooks. Fifteen is located in a former warehouse in Amsterdam's Eastern Harbor development, with appropriate streetwise interior with colorful corrugated iron walls and graffiti. Two separate areas, the Restaurant with a fixed 4-course menu, and the Trattoria with two pastas at moderate prices.
Open lunch noon-3pm, dinner 6pm-11pm. Closed sun.
